The Science of Dye-Free Baking 🌱✨

At Pavlovsky’s Equation for Sweetness, we believe cookies should be joyful inside and out — beautiful to look at, delicious to eat, and made without artificial extras. That’s why every cookie we decorate is 100% dye-free.

But creating vibrant colors without synthetic dyes takes more than just a quick stir. There’s a little bit of science — and a whole lot of patience — behind every shade of icing that makes it onto your cookies.


Why Not Artificial Dyes?

Traditional food coloring is designed for convenience. You squeeze a drop, stir, and pretty quickly get a bright, bold color. But that convenience comes with ingredients I don’t want in my kitchen — or in your cookies.

Instead, we rely on natural powders created from real foods. I sometimes joke at markets that you’re actually getting a tiny bit of veggies in your cookies — from things like carrots and radishes. It makes me smile to think of it as a sweet treat with a little hidden goodness.


The Waiting Game: How Natural Colors Work

Unlike artificial dyes, natural colors don’t show their true shades right away. They need time to bloom. After I mix them into the icing, I let them rest for at least 12 hours (and in some cases, 24 hours or more) so the colors can fully develop.

That means every batch is planned carefully in advance — because patience is the secret ingredient. Black, for example, is one of the trickiest colors. It has to sit at least a full two days to reach the depth I want.

This week, I ran into a funny challenge: I realized I was out of orange powder right as I started working on pumpkin cookies

(thanks ADHD brain! LOL). So I tried mixing red and yellow instead. With natural colors, it’s never as simple as “red + yellow = orange” because each powder is made from a variety of foods. The result? Pumpkins that were mostly orange… with just a hint of “sunburn.” Max and I had a good laugh about it — and it’s just another reminder that baking without shortcuts keeps me on my toes.


Why It Matters

For me, it’s about more than just pretty cookies. It’s about creating something I can be proud of — cookies I’d happily recommend to a friend or serve at my own table. Choosing dye-free means choosing quality, authenticity, and care in every step.

And when you bite into a Cozy Pumpkin or a Sprinkle Stadium cookie this fall, you’ll know that every ounce of color came not from a bottle of dye, but from a thoughtful process that balances science, art, and a whole lot of love.
